FRUITY CHIA SEED PUDDING

CALLING ALL SUGAR ADDICTS! 

This is a snack that you don’t have to feel bad about.  Why? There’s no added refined sugar.  Heck, there’s not even any honey or maple syrup in it.  This ‘Fruity Chia Seed Pudding’ is a perfect solution for anyone trying to kick the habit.     So when I’m trying to avoid sugar, this recipe is at the top of the heap.  It just relies on the sweetness of the fruit Mother Nature provides.

FRUITY CHIA SEED PUDDING

Ingredients
  1. ½ Ripe banana
  2. 1 Cup frozen strawberries (or blueberries or mango)
  3. ½ Cup your favourite milk (or water)
  4. 4 Tablespoons chia seeds
  5. ½ Teaspoon vanilla
Instructions
  1. In a blender or food processor, combine everything except the chia seeds until it’s pureed.
  2. Taste and if it isn't sweet enough, add more banana and process again.
  3. Transfer to an airtight container, add chia seeds and stir until well incorporated.
  4. Cover and refrigerate overnight.
  5. Divide among bowls and serve.
Notes
  1. Michelle’s Fancy Version
  2. Make 2 or 3 separate portions of strawberry, blueberry and/or mango. When serving, layer each flavour of pudding in a parfait glass. Enjoy!
  3. Note: If you use wild blueberries you will need more liquid and more banana for added sweetness.

The added bonus is that chia seeds are packed with omega-3 fatty acids, protein, dietary fiber and antioxidants.  I often put a teaspoon of chia seeds in a cup of water, let it sit overnight to make a gel.  I like to have it on hand to add to smoothies.  Tell me your favourite way to use chia seeds.  Bonus points if you ever had a Chia Pet.  I can still hear that famous commercial jingle playing in my head LOL!
